This week (13-19 May) marks National Vegetarian Week and to kick things off we’re sharing inspiration to fuel a vegetarian approach to weeknight meals. Gone are the old school stereotypes of munching on a rabbit’s diet in the name of vegetarianism, with statistics showing towards the end of 2018 that one in 8 Britons is vegetarian and a further 21% claim to be ‘flexitarian’ where a largely plant-based diet is occasionally supplemented with meat. Overall, approximately a third of UK consumers have deliberately reduced the amount of meat they eat or removed it from their diet entirely.
